A super quick dinner made in the air fryer, these Black Bean Taquitos are creamy, easy and so delicious. I bet you can't eat just one! Serve them with salsa and sour cream for dipping, and enjoy this 5-ingredient dinner that comes together in 15 minutes!
Originally, I planned to use my air fryer for making frozen foods for dinner on hectic nights. We love a breakfast for dinner situation, and no one makes hash browns like the air fryer. However, the speed at which it cooks has totally captured my heart! I love how everything the air fryer touches gets perfectly crisp in such a quick amount of time.
I decided to make my black bean taquitos in the air fryer instead of the oven, and couldn't believe how fast they were ready! The outside is crispy perfection, and the inside is creamy piping hot chicken. I don't think I'll be making them any other way from now on!
If you can stir together a can of black beans, leftover shredded chicken, cream cheese and some spices, you can have dinner in just 15 minutes, too! If you don't have leftover chicken, feel free to use more black beans in its place as a vegetarian option.
The Ingredients
- Black Beans. One 15-ounce can of black beans that has been drained and rinsed.
- Cooked Chicken. This is a great use for leftover shredded chicken! I haven't tried it, but you might even be able to use canned chicken here. If you have lots of leftover chicken, try my Stuffed Peppers with Chicken recipe, too.
- Chili Powder. Chili powder is a mix of several spices (red chiles, cumin, garlic, onion, and oregano), so it's the perfect thing to use for a big hit of flavor. Please be aware that this is not the same thing as 'chile powder' which is one type of chile, dried and ground into a powder (and often very spicy).
- Cream Cheese. This makes all the ingredients stick together. You can use regular cream cheese or whipped cream cheese (the same amount of either).
- Flour Tortillas. I really recommend flour tortillas because they hold their shape together better when rolling. If you want to use corn tortillas and stay gluten free, warm them in the microwave before attempting to roll. If they still crack when rolling, you'll have to fry them in hot oil on each side for a few seconds to prevent this.
- Oil. A layer of oil brushed on the outside of the black bean taquitos helps them get nice and crispy while baking in the air fryer.
How to Make Black Bean Taquitos
In a large bowl, combine the beans, chicken, chili powder, salt and cream cheese.
Using a potato masher or fork, smash the beans into the mixture until combined—lumps are okay, but be sure to break up the cream cheese evenly.
Place about 3 tablespoons of the bean mixture down the center of each tortilla, roll up and place seam side down in the bottom of an air fryer.
Place the taquitos very close to each other (for support) seam-side down, Brush with the oil, and cook at 400 for 5-8 minutes, until crispy golden brown. Do multiple batches if you can’t fit all of them in a single layer.
What if I don't have an air fryer?
If you don’t have an air fryer, place these black bean taquitos on a small baking sheet where they can touch, like maybe a pie pan or a quarter sheet pan. Brush with oil and bake at 400 for 10-12 minutes, until crispy golden brown.
